Feature Recipe: Haida Wild Sablefish Tacos

For the Sablefish:

For the Slaw:

  • 1 Cup White Cabbage (Strips)
  • 1/2 Cup Red Cabbage (Strips)
  • 3/4 Cups Carrots (Shredded)
  • 1/2 Tomato (Diced)
  • 3/4 Cup Cilantro (Finely Chopped)
  • 1 Lime (Juiced)
  • 2 Tbsp Sugar
  • Salt and Pepper (To Taste)

For the Tortillas:

  • 4 Cups All-Purpose Flour
  • 1 Teaspoon Salt
  • 2 Teaspoons Baking Powder
  • 2 Tablespoons Lard
  • 1 1/2 Cups Water


For the Sablefish:

  1. Prepare Haida Wild Sablefish out of package.
  2. Heat up pan and add butter. Melt until moisture is removed from the butter (medium high heat).
  3. Place Sablefish (skin side down) and sear for 5-7 minutes.
  4. Flip once.
  5. Continue cooking flesh side down for 2 minutes.
  6. Remove from pan and set aside.

For the Slaw:

  1. In a bowl, add white cabbage, red cabbage, carrots, tomatoes and cilantro.
  2. Add lime juice, sugar, salt and pepper.
  3. Mix well and set aside.

For the Tortillas (bigger batch):

  1. Whisk the flour, salt and baking powder together in a mixing bowl.
  2. Mix in the lard with your fingers until the flour resembles cornmeal.
  3. Add the water and mix until the dough comes together.
  4. Place on a lightly floured surface and knead a few minutes until smooth and elastic.
  5. Divide the dough into 24 equal pieces and roll each piece into a ball.
  6. Preheat a large skillet over medium high heat.
  7. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla.
  8. Place into the hot skillet, and cook until bubbly and golden.
  9. Flip and continue cooking until golden on the other side.
  10. Place the cooked tortilla into a tortilla warmer, continue rolling and cooking the remaining dough.
